With direct tv is their a way to create my own channel list so that only the channels I choose show up on my direct TV menu? Everything I dont choose would then not show up on the menu ever?

Of course, do the following below.

Press MENU

Go to settings and help

Go to favorite channels

Choose Custom 1

Choose edit list

Then put a check box by every channel you want to show in your directtv channel lineup. Uncheck any you dont want to show.
