This weekend I am switching my iphone to a new iphone and I want to save all pictures and messages. I also plan on giving my old iphone to a friend and I want all my information wiped for sure off of it. What is the procedure for moving to a new ihpone like this?

I would just connect to itunes and click backup. This backs up everything. If you wanted to save only your pictures for example, then you could just use windows explorer to cut/paste from iphone to computer etc. You can also bulk copy photos this way from the iphone.
When you get the new phone, connect to itunes for setup. It will then walk you through the steps. You will have an option to reload from backup. Just make sure you dont accidently click something wrong. Thats it for the new iphone, its pretty simple.
With you old iphone, now go into settings and choose the option to erase all content and settings. This will ask you for your icloud password as its wiping that off there too. Once that is done, the old iphone can be sold etc, as all your details are gone off it.

Is that enough to sell it like Facebook passwords are wiped on the phone? No icloud traces left or find my iphone left? No email or messages left?

No its all gone, when you do the "erase content and settings", it wipes it back to factory as if its brand new. Thats why you have to enter your icloud password or it wont even let you do any of this, thats a security feature built into the iphone (really good feature too!) which means only the original owner can wipe it. Once done then anyone can set it up as their own phone.

After connection your iphone to computer, in itunes just click your iphone icon, and under backups it says "backup now" or "restore backup". You can choose icloud or computer, click restore backup to copy back to iphone from your previous backup.
